Healthy living, full of self-control, wisdom, and sound judgement is just one that I can maximize my life for the sake of His kingdom. (After all, the healthier I am, the more able-bodies I'll be to share the gospel, make disciples, and serve in the Church and beyond.)

I think it's safe to say that I overdid it and *BLAH* is the result. Lesson learned: Do not go off a juice fast and overeat on all your favorite things. Instead, change your favorite things and/or eat them in smaller quantities.

I actually miss juicing. I know it's strange, but it's true. I miss the clean, healthy feeling of ingesting so many good natural vitamins and nutrients. I miss the "just right" feeling of fulness after a "meal/juice." I miss seeing the numbers decreasing on the scale as opposed to INcreasing this weekend. (Dislike!) I miss knowing that I reached my daily quotient of fruits and vegetables and then some!

So, after much thought and discussion with Julie, we are going back on the juice fast this week (with some exceptions). We'll juice Monday through Friday with a couple of real meals thrown in due to prior commitments with friends. Then, when the weekend arrives, instead of throwing ourselves head first into a bowl of cookie dough, we are going to make some good Dr. Furhman soup (chock full of veggies) and eat some other whole foods, like bean salad, humus and whole wheat pita bread, and perhaps even some fish or chicken.

We decided that when Sunday rolls around, we will even allow ourselves an "unhealthy" treat, but not one that we'll make from scratch. (It's just too tempting to overeat when you make a whole batch of homemade cookies.) Instead, we'll go out somewhere to buy just one of something (an ice cream cone, a piece of dark chocolate). We'll see where our cravings lead us. This approach is a much wiser one for keeping our appetites in check, while at the same time, allowing us to give in to just a little decadence.

So, tonight, I make 5 different juices (Reboot Your Life recipes: Mean Green, Lemon Lime, Green Lemonade, Pineapple/Orange, and the Melon/Kale juice). I was in the kitchen (once again) for about an hour and a half, but now we are good to go for tomorrow and then lunch and snack juices for the next 5 days. It's a whole lot of work, but it is so well worth it. :)

I will be going to be so much happier tonight knowing that another especially healthy week lies before me. Thank you, Lord, for so many wonderfully healthy foods, the good lesson we learned this weekend, and the self-control to keep going on our path to optimum health!

Reflections

Having had plenty of time to think about food, I would say that there are certain things I really missed, which surprised me.

Let me preface this by saying that since November, Julie and I have been almost Vegan, meaning that we have avoided all processed foods, dairy, red meat, and chicken (Ok, if you don't count the cookies we were making.) We knew that eating the greatest quantity of the foods with the highest micronutrient scores was the best way to feel great, be healthy, and proactively fight potential diseases. So, for the past several months, that has been our life.

Neither one of us missed meat because we were still eating fish. What to do? Think. Think fast. How can I possibly resist?

As soon as she left, I ate one and then immediately texted Julie to confess that I cheated for the first time in nearly 3 weeks. She texted back in just a few seconds saying that she was thinking we should end the juice fast early anyway because she felt satisfied with her results and didn't "need" to go a full 21 days.

So, it took me a few moments to consider this and I still wasn't 100% convinced until she came home from work and announced that she thought we should go to Sweet Tomatoes for dinner to end the fast and celebrate. Her big excuse: "Well, I have a coupon." :) Nice. Hard sell.

The thought of actually crunching lettuce in my mouth was surprisingly exhilarating after drinking all my veggies for almost a month now. My reply to her went something like this: "Um, let me think about it...(2 seconds elapse)...Sure, are you ready to go?" ;)

The meal was fresh, deliciously crunchy and the flavors were like an explosion in my mouth. I tasted every spice, grain of sugar (in the broccoli salad I put on 1/8 of my plate-yum) and had to laugh when I realized we weren't even talking during dinner like we usually do. Clearly, we were enjoying every single bite of food!

Out of the 3 small portions of salad I put on my plate, I only ate 2, plus a few sips of my soup, 1/2 of a corn muffin and 1 small "stick" of pizza. Amazingly, I was stuffed and couldn't even finish. Ah, so this is what it feels like to have a tiny stomach.

We walked slowly to the car, rubbing our bellies on the way, and just smiled at each other happily, knowing that we had a done a great job and it was all well worth it.

The Nossal Manor juice fast is officially over...for now. ;)

Total weight lost: 15 pounds in 19 days (*insert BIG smile and many loose clothes here*)

Colorful and Ready to Grab and Go!

Despite all 3 Fathers of Western Medicine (Hippocrates, Galen and Paracelsus) having fasted and having prescribed fasting who declared fasting "the greatest remedy, the physician within", the fact remains that symptoms-oriented trained U.S. physicians are also equally in the dark. How sad is this when so many are suffering from poor health and diseases in the world. The answer is only a grocery store visit away.

WARNING: Now, for those of you interested in doing a juice fast, you should know right off the bat that it takes a whole lot of time, effort, and money, so you will need to be fully committed if you're doing it longer than a day. It's MUCH easier with 2 people as all of the above is shared and the burden is lessened.

Julie and I would take turns gathering our recipes, making a meticulous bi-weekly grocery list (i.e. 32 green apples, 48 kale leaves, 16 oranges, etc.), doing the shopping, and then actually doing the juicing at night.

We would always make 4 juices a night: 2 for the next day, 1 for dinner, and then 1 for a "dessert" (typically it was orange/pineapple juice, which was just divine). One batch for the next day could be put in glass bottles (Starbucks Frappuccino) ready for 10 AM the next day, and one batch would be frozen for lunch the next day. We also did extra juicing on Sunday night to prepare for the week (the 2 PM and 4 PM serving). Having this done in advance cut down on much of the work on each weeknight.

Many juices would yield up to 40 oz., which was terrific because that would give us 4 servings. Juices containing melons, apples, celery, oranges, and pineapple provided the most juice. (There are many more, as well.) We would also label our juices to keep it straight. Some are easy to identify, but once you get a few greens going, you'll be thankful you labeled them so you don't keep reaching for the "Mean Green" when you really wanted the sweeter Melon green.

I hope this helps, but please ask me if you have any more practical questions. Julie and I just had to learn by trial and error and I'd love to spare you of that. :)

Day 14

Two weeks down, just one more to go. :)

I'm feeling really great: full of energy, clear skin, quick mind, fantastic sleep (not that I ever have a problem in that dept. though). It makes me so happy to know that my body is really pretty clean and clear right now as all those nasty toxins have likely exited. (At least, that is my hope anyway.)

Mentally, it is getting tougher as I am still thinking about food a lot. It doesn't help when you see food everywhere: magazines, on TV, church events, etc. But, Julie and I keep reminding each other that it won't be long now. As we were merrily floating on rafts in the clear ocean yesterday, she asked me what meal I was most looking forward to having. "Mmm, BBQ chicken, peas, and rice!" That meal keeps whirling around in my head, ok, that and a warm, gooey banana choc. chip muffin straight out of the oven. Ahhhh. Wow...amazing how quickly this works!

Julie had to go back to the story today to stock up on more fruits and veggies, so once again, the fridge looks just so lovely and colorful. :) When I came home, she reported that she had shopped, planned, and juice for the better part of the day. I was so thankful and knew that I'd be taking my turn next.

Adding bonus: The house is smelling so wonderful. It's the FRESHEST aroma I think I've ever smelled. Mmmm. Our favorite juice to date is the pineapple/orange. Big surprise there, right? :) It's just heavenly. Our worst juice to date is the "Gazpacho" juice, which contained juiced onions, tomatoes, celery, red peppers, and a few other things. The bottom line is that some things just should NOT be juiced and red pepper is one of them. Ugh. They prevent blood from sticking, clotting, becoming toxic as well as helping to lower triglycerides levels (Here is more info about how to lower triglycerides). Good to great levels of vitamin C can be found in most vegetables and fruits. For the health benefits of juicing vitamin E you can use blackberries, kiwi, asparagus and spinach in your juicer recipes.

Potassium and magnesium are essential for proper heart function and a regular heart beat. One of its main functions is to clean the blood and remove toxins and metabolic waste. With the amount of toxins we are dealing with everyday in modern life we need to be real diligent in helping to keep it “clean” so it can keep us clean!
Certain nutrients are needed to provide the juicing benefits of liver cleansing. Antioxidants beta-carotene, vitamin C, vitamin E, and N-acetyl cysteine are potent liver cleansers. In addition, B-vitamins riboflavin and niacin also aid liver cleansing. Cabbage, brussel sprouts and cauliflower have been found to be great for the liver.

You can also add milk thistle supplements to your diet to help the liver detoxify.

Alkalizing your system (vegetable juicer recipes only):

All vegetables are alkalizing. Fruits on the other hand are not; they are mostly acidic in nature.

The benefits of making your body PH level less acidic is a subject of its own, so here are just a few juicing benefits;

Improved brain function

Improved heart function

Slowing down the aging process

Improved joint function – helping with arthritis

Less disease-prone body environment. Acidic environments breed diseases.

Better digestion

Helping with healthy skin, hair, nails and eyes:

The antioxidants vitamins C and E help to prevent skin damage from sun exposure, due to their free radical neutralizing abilities. The health benefits of juicing blackberries and blueberries together will provide you with a good source of vitamins C and E.

A deficiency in riboflavin (vitamin B2) can cause cracked lips, hair loss, dermatitis, greasy looking skin and other skin problems. Putting kale, spinach, and asparagus in your juicer recipes will provide you with vitamin B2.

The most potent nutrient for healthy eyes is vitamin A, which is not found in plants. Its precursor, beta-carotene, is found in abundance in orange colored fruits and vegetables. Beta-carotene is turned into vitamin A by the body. This vitamin is essential for the retina to function properly and prevent night blindness. Both vitamins A and C reduce the risk of age-related macular degeneration (AMD) and cataracts. Carrot juice is a very good source for both of these vitamins.

Increased energy levels:

This one is pretty simple. Lots of juicing means lots more vitamins and minerals which are responsible for all sorts of necessary chemical reactions promoting health and vitality and therefore lots more energy. Enjoy juicer recipes every day!!

Rebuild blood cells:

Yes that’s right!
This is made possible by the incredibly healthy chlorophyll, which would need an article of its own to give justice to its health benefits!
On a molecular level chlorophyll looks almost exactly like a component of the red blood cell hemin. More amazingly scientists have found that when you assimilate chlorophyll into the body, it makes the chemical shift and actually becomes hemin. Essentially, taking chlorophyll is almost like getting a blood transfusion!
Chlorophyll is also a pigment that gives plants their green color. So put the green stuff in your juicer recipes! The darker the green, the more chlorophyll it contains.

Improved immune system:

Drinking juicer recipes regularly is going to give you a wide variety and more than adequate amount of antioxidants which are essential for a healthy immune system. The antioxidants from fruits and vegetables include vitamins A, C, E, plus a wide range of plant chemicals called phytochemicals. Phytochemicals have amazing and varied health benefits, most notably anti-cancer properties.

Brought to you by Juicer Recipes Now

Day 2

Tuesday morning, I curiously and gingerly stepped onto the scale. Two pounds lost!! Amazing. I just love to see those numbers moving in the right direction for a change!

My morning routine was easier than ever. I normally make coffee, make my lunch (which consists of chopping many veggies for a pretty large salad), then I make a smoothie for both Julie and me. I have it down pat, but even with speed and practice, it takes about 20 minutes.

So, how lovely was it to only pull four bottles from the fridge and freezer, make some tea, and then the smoothie? I loved looking into my lunchbox and seeing this site:

Day 1

Well, to prepare for Day 1, Julie and I juiced on Sunday night and made the "Mean Green" juice. We wanted a balance of both fruits and veggies, even though we'd much prefer the sweet, delicious fruits exclusively. :) The greens had to get in there, too.

Next, we ventured off to Costco, Whole Foods and Publix to gather all the goods. It took several hours, planning and energy, but we know it will be well worth it. (Never mind that Diet Coke on the door. Julie is actually trying to get off that "juice" but it's a weaning process, so she says.)

Here's a list of some of the food (all organic):

kale

collard greens

beets

mint

parsley

lemons

limes

apples

strawberries

peppers

onions

cabbage

honeydew melon

cantaloupe

carrots

cucumbers

Asian pears

ginger

Swiss chard

And, we're back...

Well, it's been just a few months (oops) since my last post, but I'm happy to say that since November, Julie and I have made permanent changes to our diets, which is exciting. I was curious to see if all this good knowledge about excellent nutrition would actually yield some lasting results and changes and it did.

So, we would now consider ourselves to be Lite Vegans, or Vegan-ish. :) Dairy (milk, eggs, cheese, etc) is no longer part of our diet, nor is red meat or chicken. Fish is still a favorite. (A few other favorites remain, but I'll get to that...)

Here's a typical day's menu for me:

Breakfast: Kale/Berry smoothie (I'm frankly a little surprised I haven't tired of this.)

Snack: Nonni's biscotti (Ok, I need a little sugar, right? Plus it's only 100 calories)

Lunch: Dr. Furhman's Quick and Creamy Vegetable Bean Soup + large spinach salad

Snack: organic Fugi apple, baby carrots, sugar snack peas

Dinner: Some type of fish + green veggie (peas, green beans, zucchini)

I feel great and would say I'm very healthy, except for just one thing: my addiction to sweets! Yes, sadly, that is the one area that still hinders me and slips me up. Julie and I love to make oatmeal chocolate chip cookies and brownies on a biweekly basis, which is just ridiculous. Something must be done.

This brings me to the most recent exciting news: Julie and I are going to embark on a 3 week juice fast. Yep. We were super inspired by a DVD we watched last weekend called "Fat, Sick, and Nearly Dead," which is documentary made Joe Cross, an Aussie who was sick and tired of being sick and tired. He took charge of his life by embarking on a 3,000 journey across America with his juicer in tow each step of the way. After 60 days of doing a juice fast, he lost over 80 pounds and was able to go off his multiple medications. His rare auto-immune disease disappeared and he is still healthy 2 years later and inspiring millions with his remarkable story and transformation. We want to join in the change!

So, for the next 3 weeks, we will do a juice fast and look forward to all the positive changes that lie ahead! May the Lord give is strength, grace, and self-control to stick with it until the end!

{Chock Full of Goodness}

<img style="display:block; You shall have them for food.'" Just think of some of His creative, edible designs: Starfruit, kiwi, Romanesco Broccoli, and purple cauliflower, just to name a few.

I've always loved the idea of pure, whole foods, touched by the sun, but nearly untouched by men. (Ok, the farmer doesn't count.) Not only do they taste pure, clean, and vastly different than an Oreo cookie, sausage, or Twinkie, but they have the ability to satisfy and actually heal a person from the inside out unlike anything else being served up by mere men.

It's been over the past few months that my sister, Julie, and I have been becoming more knowledgeable about whole foods and their wonderful effect on our bodies. While we've always been fairly healthy, we knew there were still some drastic changes to be made, especially when it came to sweets. Everyone who knows us knows that we love us some good, warm, gooey Ghiradelli brownies or fresh-from-the-over peanut butter-chocolate chip-oatmeal cookies. (*sigh*) BUT, this is not about how much we love sugar. It's about getting OFF of sugar and loving the fresh, pure food from the hand of God.

And, you know, the longer I live, the more I care about glorifying God, just as Paul writes in 1 Corinthians 10:31, "So, whether you eat or drink, or whatever you do, do all to the glory of God." I can be doing a whole lot better glorifying God through exercising better stewardship over this one and only body that He gave me. So, I will. Starting today. :)

PS. It was a wonderful first day. I was absolutely full from all those delicious fruits and veggies and even had a tough time finishing my 1+ lb. salad at lunch!
